Due to legislative and climatic changes, wheat quality is most recently subject to an increasing number of challenges. Unstete and inhomogeneous flour qualities demand constant adaptation of the processing processes. In view of the increasing pressure to increase resource efficiency and the simultaneous shortage of skilled workers, digitalisation concepts such as digital twins (Digital Twins, DT) are becoming increasingly important. A DT is a virtual model of a real object, process or system and uses data from sensors and other sources to accurately map a physical system using process models (PM). However, the isolated use of PM is not effective for multi-stage processing processes, as interdependencies and interactions exist. This is why this project proposes a concept for DT for dough preparation and processing, which combines the PM of the individual processing steps with the formulation and thus enables holistic process monitoring and control. The aim is to be able to react to variations in protein content through coordinated formulation and process-side adjustment in such a way that high-quality bakery products are produced constantly. This is implemented by the development of a DT with intercorrelated PM, which extends from flour characterization to the kneading process to the cooking.

Die Weizenqualität unterliegt aufgrund von legislativen und klimatischen Änderungen zuletzt einer steigenden Zahl an Herausforderungen. Unstete und inhomogene Mehlqualitäten fordern stetige Anpassung der Verarbeitungsprozesse. Angesichts des zunehmenden Drucks zur Steigerung der Ressourceneffizienz sowie des gleichzeitigen Fachkräftemangels gewinnen Digitalisierungskonzepte wie Digitale Zwillinge (Digital Twins, DT) zunehmend an Bedeutung. Ein DT ist dabei ein virtuelles Modell eines realen Objekts, Prozesses oder Systems und nutzt Daten von Sensoren und anderen Quellen, um ein physisches System mittels Prozessmodellen (PM) präzise abzubilden.
