Our project addresses the declining protein content of winter wheat as a result of climatic and regulatory changes and the resulting reduced baking quality over the last decade. So far, there is a lack of technological possibilities to respond adequately to these fluctuations in protein content and to compensate for the associated quality losses. The research goal of the project is therefore a controlled protein enrichment by means of load-based separation for the production of improved flours and their establishment as an efficient method for the targeted adjustment of the protein content of wheat flour. The aim is to investigate the charging and separation process in a laboratory facility and to transfer the knowledge gained to a laboratory facility.
Your profile:
We expect an above-average university degree (M.Sc.) in food technology, process engineering, chemical engineering, bioprocess engineering, or a comparable field of expertise. Unsere Forschung widmet sich innovativen Verfahren, die die Qualität und Nachhaltigkeit moderner Lebensmittel entscheidend prägen. Die Prozesse werden insbesondere für pflanzliche Ausgangsmaterialien oder alternative Proteine entwickelt. Ein großer Teil der Ausgangsmaterialien ist pulverförmig, daher ist die Partikel- und Pulvertechno-logie ein wesentlicher Bestandteil unserer Forschung.
Unser Vorhaben adressiert den im letzten Jahrzehnt durch klimatische und regulatorische Veränderungen rückläufigen Proteingehalt des Winterweizens sowie die damit verbundene reduzierte Backqualität. Bislang fehlt es an technologischen Möglichkeiten, angemessen auf diese Schwankungen im Proteingehalt zu reagieren und die damit verbundenen Qualitätsverluste zu kompensieren. Das Forschungsziel des Projekts ist daher eine kontrollierte Proteinanreicherung mittels ladungsbasierter Trennung zur Herstellung verbesserter Mehle und deren Etablierung als effiziente Methode zur gezielten Anpassung des Proteingehalts von Weizenmehl. Es geht darum, den Auflade- und Trennprozess in einer Laboranlage zu untersuchen, und die gewonnenen Erkenntnisse auf eine Laboranlage zu übertragen.
Ihr Profil:
Wir erwarten einen überdurchschnittlichen Hochschulabschluss (M.Sc.) in Lebensmitteltechnologie, Verfahrenstechnik, Chemieingenieurwesen, Bioprozesstechnik, oder einem vergleichbaren Fachgebiet. Sie verfügen über fundierte Kenntnisse in der Lebensmittelverfahrenstechnik sowie mechanischen Verfahrenstechnik, oder sind bereit, sich diese anzueignen. Erfahrung in der instrumentellen Analytik, wie beispielsweise bei der Partikelgrößenanalyse und Partikel-Partikel-Wechselwirkungen sind wünschenswert. Eine strukturierte und selbstständige Arbeitsweise sowie Freude an interdisziplinärer Teamarbeit zeichnen Sie aus. Sehr gute Deutsch- und Englischkenntnisse in Wort und Schrift runden Ihr Profil ab.
